Citrus Cured Albacore Tuna with White Soy Yuzu with Jalapeños and Cilantro

For the seafood lover in your life!

 

Ingredients:

½ cup salt

1/3 cup sugar

Zest of one lemon

Zest of one lime

Zest of one orange

 

Method:

Blend together all of the ingredients and rub gently over albacore tuna (2 kg) and marinate for 4 hours.

For the sauce, 2 tbsp Yuzu, 2 tbsp mirin, 2 tbsp white soy, 1 jalapeno thinly sliced no seeds. One small bunch of cilantros, 1 orange segmented.

Combine Yuzu and Soy Mirin.  Set aside.  Rinse marinade off Tuna.  Slice thinly on 4 plates.  4 pieces per plate.

Drizzle sauce.
